One-Pot Mexican Chicken Pasta

Ingredients

  • ½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • ½ onion, sliced
  • 1 Tbsp olive oil
  • ½ Tbsp Southwest seasoning
  • 4 oz whole wheat ziti pasta
  • 1 cup low-sodium chicken broth
  • 1 cup water
  • 1 organic tomato, chopped
  • 1 organic green bell pepper, chopped
  • 1 cup BPA-free black beans, drained and rinsed
  • ½ cup frozen whole kernel corn
  • ¼ cup shredded Mexican-blend cheese
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook chicken and onion in hot oil in a Dutch oven over medium-high heat until chicken is done. Stir in seasoning.
  2. Stir in pasta, broth, and water; bring to a boil, reduce heat, and simmer, covered, 6 minutes, stirring occasionally. Stir in tomato, pepper, beans, and corn; cook, stirring occasionally, 5 minutes or until pasta is tender.
  3. Sprinkle with cheese and cilantro; let stand 1 minute or until cheese is melted.
