Falafel Pita Sandwiches

Ingredients
- 1 (15.5-oz) can no-salt-added chickpeas, drained and rinsed
- 2 Tbsp chopped fresh parsley
- 1 egg white
- 1 Tbsp lemon juice
- ½ tsp ground cumin
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup whole wheat panko breadcrumbs
- 2 Tbsp olive oil
- 2 lettuce leaves
- 3 Tbsp crumbled feta cheese
- ¼ cup thinly sliced red onion
- 1 whole wheat pita bread round, halved
Instructions
- Pulse chickpeas, parsley, egg, lemon juice, cumin, salt, and pepper in a food processor until smooth; stir in panko. Shape into 4 (2½-inch) patties.
- Cook patties in hot oil in a large nonstick skillet over medium heat 2 minutes per side. Place 2 patties, 1 lettuce leaf, 1½ Tbsp cheese, and onions in each pita half.

- 1 seedless cucumber, halved and sliced
- 1 pint organic grape tomatoes, halved
- ¼ cup plain Greek yogurt
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Combine cucumber, tomatoes, yogurt, garlic, salt, and pepper in a medium bowl; chill until ready to serve.
