Falafel Pita Sandwiches

Ingredients

  • 1 (15.5-oz) can no-salt-added chickpeas, drained and rinsed
  • 2 Tbsp chopped fresh parsley
  • 1 egg white
  • 1 Tbsp lemon juice
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup whole wheat panko breadcrumbs
  • 2 Tbsp olive oil
  • 2 lettuce leaves
  • 3 Tbsp crumbled feta cheese
  • ¼ cup thinly sliced red onion
  • 1 whole wheat pita bread round, halved

Instructions

  1. Pulse chickpeas, parsley, egg, lemon juice, cumin, salt, and pepper in a food processor until smooth; stir in panko. Shape into 4 (2½-inch) patties.
  2. Cook patties in hot oil in a large nonstick skillet over medium heat 2 minutes per side. Place 2 patties, 1 lettuce leaf, 1½ Tbsp cheese, and onions in each pita half.

  • 1 seedless cucumber, halved and sliced
  • 1 pint organic grape tomatoes, halved
  • ¼ cup plain Greek yogurt
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine cucumber, tomatoes, yogurt, garlic, salt, and pepper in a medium bowl; chill until ready to serve.
