Chocolate Chip Confetti Cookies

Ingredients

  • 1¼ cups all-purpose flour
  • 1¼ cups yellow cake mix (from a 15.25-oz box)
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups milk chocolate chips
  • ½ cup rainbow sprinkles

Instructions

  1. Whisk together flour, cake mix, baking soda, and salt. Set aside.
  2. Beat butter on medium speed with an electric mixer until smooth. Add both sugars, and beat until fluffy. Add egg and vanilla; mix well.
  3. Add flour mixture to sugar mixture; mix on low speed until blended. Fold in chocolate chips and sprinkles. Cover dough, and chill 2 hours.
  4. Preheat oven to 350°F, and line two baking sheets with parchment paper.
  5. Roll dough into 1½-inch balls, and place 2 inches apart on prepared pans.
  6. Bake, 1 pan at a time, 10 minutes or until golden around the edges. Cool 5 minutes on baking sheets; transfer to a wire rack to cool completely.
