Chicken Tzatziki Tostadas

Ingredients
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- ½ cup Greek vinaigrette
- 3 almond flour tortillas
- ½ (8-oz) container tzatziki sauce
- ½ (5-oz) pkg baby spinach
- 1 tomato, cut into wedges
- ⅓ cup thinly sliced red onion
- ⅓ cup crumbled feta cheese
Instructions
- Preheat oven to 350°F. Combine chicken and vinaigrette in a large bowl. Cover and chill 15 minutes.
- Meanwhile, arrange tortillas in a single layer on a parchment-lined baking sheet. Lightly coat tortillas with cooking spray. Bake 6 to 8 minutes or until crisp and browned.
- Remove chicken from marinade; discard marinade. Cook chicken in a large skillet over medium-high heat 4 minutes per side or until done. Slice chicken.
- Spread tzatziki sauce over each tortilla. Top with spinach, tomato, chicken, onion, and cheese.
