Chicken Tzatziki Tostadas

Ingredients

  • ¾ lb boneless, skinless chicken breasts, halved lengthwise
  • ½ cup Greek vinaigrette
  • 3 almond flour tortillas
  • ½ (8-oz) container tzatziki sauce
  • ½ (5-oz) pkg baby spinach
  • 1 tomato, cut into wedges
  • ⅓ cup thinly sliced red onion
  • ⅓ cup crumbled feta cheese

Instructions

  1. Preheat oven to 350°F. Combine chicken and vinaigrette in a large bowl. Cover and chill 15 minutes.
  2. Meanwhile, arrange tortillas in a single layer on a parchment-lined baking sheet. Lightly coat tortillas with cooking spray. Bake 6 to 8 minutes or until crisp and browned.
  3. Remove chicken from marinade; discard marinade. Cook chicken in a large skillet over medium-high heat 4 minutes per side or until done. Slice chicken.
  4. Spread tzatziki sauce over each tortilla. Top with spinach, tomato, chicken, onion, and cheese.
