Rosemary-Garlic Pork Medallions
Shaved Carrot Salad
Ingredients
- 1 Tbsp olive oil
- 1 Tbsp chopped fresh rosemary (or use 2 tsp dried crushed rosemary)
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1 pork tenderloin, cut into ¾-inch slices (1 lb)
Instructions
- Preheat grill or grill pan to medium-high heat.
- Combine oil, rosemary, garlic, salt, and pepper; rub over pork. Grill 1 to 2 minutes per side or until a meat thermometer inserted in center reads 145°F. Sprinkle with additional rosemary, if desired.
Side Dish Ingredients
- 2 carrots
- 1 (5-oz) pkg spring mix
- 6 Tbsp crumbled feta cheese
- 6 Tbsp chopped roasted, salted almonds
- ¼ cup sweetened dried cranberries
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Shave carrots into thin ribbons with a vegetable peeler. Toss together carrots and remaining ingredients in a bowl.
