Rosemary-Garlic Pork Medallions

Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp chopped fresh rosemary (or use 2 tsp dried crushed rosemary)
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper 
  • 1 pork tenderloin, cut into ¾-inch slices (1 lb)

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Combine oil, rosemary, garlic, salt, and pepper; rub over pork. Grill 1 to 2 minutes per side or until a meat thermometer inserted in center reads 145°F. Sprinkle with additional rosemary, if desired.

Side Dish Ingredients

  • 2 carrots
  • 1 (5-oz) pkg spring mix
  • 6 Tbsp crumbled feta cheese
  • 6 Tbsp chopped roasted, salted almonds
  • ¼ cup sweetened dried cranberries
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Shave carrots into thin ribbons with a vegetable peeler. Toss together carrots and remaining ingredients in a bowl.
