Open-Faced Pulled Pork Sandwiches

Ingredients

  • 4 lb boneless pork shoulder roast, well trimmed
  • 1 Tbsp chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 sweet onions, sliced
  • 1½ cups organic apple juice
  • 1 (15-oz) can no-salt-added tomato sauce
  • 2 Tbsp unsulphured molasses
  • 6 thick slices whole-grain bread, toasted

Instructions

  1. Place pork in a 6-quart slow cooker. Sprinkle with chili powder, salt, and pepper. Top with onions, apple juice, tomato sauce, and molasses.
  2. Cover and cook on LOW 8 to 9 hours or until tender. Shred pork with 2 forks. Top bread with desired amount of pork, onions, and sauce from cooker.

  • ¼ cup olive-oil mayonnaise
  • 1½ Tbsp apple cider vinegar
  • 1 Tbsp honey
  • ¼ tsp celery salt
  • ¼ tsp pepper
  • 1 (12-oz) pkg broccoli slaw

Side Dish Instructions

  1. Whisk together mayonnaise, vinegar, honey, celery salt, and pepper in a large bowl. Add slaw; toss. Chill until ready to serve.
