Open-Faced Pulled Pork Sandwiches
Broccoli SlawIngredients
- 4 lb boneless pork shoulder roast, well trimmed
- 1 Tbsp chili powder
- 1 tsp salt
- 1 tsp pepper
- 2 sweet onions, sliced
- 1½ cups organic apple juice
- 1 (15-oz) can no-salt-added tomato sauce
- 2 Tbsp unsulphured molasses
- 6 thick slices whole-grain bread, toasted
Instructions
- Place pork in a 6-quart slow cooker. Sprinkle with chili powder, salt, and pepper. Top with onions, apple juice, tomato sauce, and molasses.
- Cover and cook on LOW 8 to 9 hours or until tender. Shred pork with 2 forks. Top bread with desired amount of pork, onions, and sauce from cooker.
Side Dish Ingredients
- ¼ cup olive-oil mayonnaise
- 1½ Tbsp apple cider vinegar
- 1 Tbsp honey
- ¼ tsp celery salt
- ¼ tsp pepper
- 1 (12-oz) pkg broccoli slaw
Side Dish Instructions
- Whisk together mayonnaise, vinegar, honey, celery salt, and pepper in a large bowl. Add slaw; toss. Chill until ready to serve.
