Steak with Horseradish Cream
Roasted Potatoes and Mixed Green SaladIngredients
- 1½ lb top sirloin steak, well trimmed
- 2 Tbsp low-sodium soy sauce
- 2 tsp smoked paprika
- ¾ tsp salt, divided
- 1 tsp pepper, divided
- ¼ cup sour cream
- 3 Tbsp prepared horseradish
- 2 Tbsp olive-oil mayonnaise
- 1 clove garlic, minced
Instructions
- Preheat grill to medium-high heat. Sprinkle steak with soy sauce, paprika, and ½ tsp each salt and pepper.
- Grill, covered, 6 to 7 minutes per side or to desired doneness. Let stand 10 minutes before slicing.
- Stir together sour cream, horseradish, mayonnaise, garlic, ¼ tsp salt, and ½ tsp pepper. Serve with steak.
Side Dish Ingredients
- 1½ lb organic red potatoes, cut into chunks
- ¼ cup olive oil, divided
- 1 tsp garlic powder
- ¾ tsp salt, divided
- ½ tsp pepper, divided
- 1 Tbsp white wine vinegar
- 2 tsp honey
- 2 tsp Dijon mustard
- 1 (10-oz) pkg mixed baby greens
- 1 pint organic cherry tomatoes
Side Dish Instructions
- Preheat oven to 425°F. Toss potatoes with 1 Tbsp oil, garlic powder, ½ tsp salt, and ¼ tsp pepper on a greased rimmed baking sheet.
- Bake 15 to 20 minutes or until browned and tender, stirring once.
- Meanwhile, whisk together 3 Tbsp oil, vinegar, honey, mustard, ¼ tsp salt, and ¼ tsp pepper in a small bowl. Drizzle over mixed greens and tomatoes.
