Strawberry-Peach Salsa Chicken
Grilled Red CabbageIngredients
- ½ cup unsulphured molasses
- ½ cup apple cider vinegar
- 2 Tbsp raw honey
- 3 cloves garlic, minced
- 1½ lb boneless, skinless chicken breasts, halved lengthwise
- 2 cups chopped strawberries
- 2 peaches, peeled and chopped
- 1 jalapeño pepper, minced
- 2 Tbsp lime juice
Instructions
- Combine first 4 ingredients in a large zip-top plastic freezer bag; add chicken, turning to coat. Chill 30 minutes.
- Preheat grill to medium heat. Remove chicken from marinade, and sprinkle lightly with salt and pepper. Discard marinade.
- Grill on an oil-rubbed grill rack, covered, 12 to 15 minutes, turning occasionally, or until chicken is done.
- Combine strawberries, peaches, jalapeño, and lime juice. Serve salsa over chicken.
Side Dish Ingredients
- 1 large head red cabbage, cut into 6 wedges
- 1 Tbsp avocado oil
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
- ¼ cup apple cider vinegar
- 2 Tbsp water
- 1 Tbsp raw honey
- 1 green onion, chopped
Side Dish Instructions
- Preheat grill to medium-high heat. Brush cabbage with oil; sprinkle with salt and pepper. Grill on an oil-rubbed rack, covered, 12 minutes or until slightly charred, turning occasionally.
- Combine mayonnaise, vinegar, water, honey, and onion; Drizzle dressing over cabbage.
