Strawberry-Peach Salsa Chicken

Ingredients

  • ½ cup unsulphured molasses
  • ½ cup apple cider vinegar
  • 2 Tbsp raw honey
  • 3 cloves garlic, minced
  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • 2 cups chopped strawberries
  • 2 peaches, peeled and chopped
  • 1 jalapeño pepper, minced
  • 2 Tbsp lime juice

Instructions

  1. Combine first 4 ingredients in a large zip-top plastic freezer bag; add chicken, turning to coat. Chill 30 minutes.
  2. Preheat grill to medium heat. Remove chicken from marinade, and sprinkle lightly with salt and pepper. Discard marinade.
  3. Grill on an oil-rubbed grill rack, covered, 12 to 15 minutes, turning occasionally, or until chicken is done.
  4. Combine strawberries, peaches, jalapeño, and lime juice. Serve salsa over chicken.

Side Dish Ingredients

  • 1 large head red cabbage, cut into 6 wedges
  • 1 Tbsp avocado oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
  • ¼ cup apple cider vinegar
  • 2 Tbsp water
  • 1 Tbsp raw honey
  • 1 green onion, chopped

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush cabbage with oil; sprinkle with salt and pepper. Grill on an oil-rubbed rack, covered, 12 minutes or until slightly charred, turning occasionally.
  2. Combine mayonnaise, vinegar, water, honey, and onion; Drizzle dressing over cabbage.
