Almond Crusted Chicken
Dilly Cauliflower Pilaf and Peas
Ingredients
- 1 large egg
- ¼ cup panko breadcrumbs (preferably whole wheat)
- 2 Tbsp almond flour
- 1 tsp garlic powder
- ½ tsp seasoned salt
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- 2 Tbsp olive oil
Instructions
- Lightly beat egg in a shallow bowl. Stir together panko, almond flour, garlic powder, and salt in a second shallow bowl. Dip chicken in egg; dredge in panko mixture, pressing gently to adhere.
- Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until chicken is done.
Side Dish Ingredients
- 1 (12-oz) pkg frozen mashed cauliflower
- 2 Tbsp chopped fresh dill (or use 1½ tsp dried)
- ⅛ tsp salt
- ½ (15-oz) pkg frozen peas
Side Dish Instructions
- Microwave cauliflower according to package directions; stir in dill and salt.
- Cook peas according to package directions.
