Almond Crusted Chicken

Ingredients

  • 1 large egg
  • ¼ cup panko breadcrumbs (preferably whole wheat)
  • 2 Tbsp almond flour
  • 1 tsp garlic powder
  • ½ tsp seasoned salt
  • ¾ lb boneless, skinless chicken breasts, halved lengthwise
  • 2 Tbsp olive oil

Instructions

  1. Lightly beat egg in a shallow bowl. Stir together panko, almond flour, garlic powder, and salt in a second shallow bowl. Dip chicken in egg; dredge in panko mixture, pressing gently to adhere.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until chicken is done.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen mashed cauliflower
  • 2 Tbsp chopped fresh dill (or use 1½ tsp dried) 
  • ⅛ tsp salt
  • ½ (15-oz) pkg frozen peas

Side Dish Instructions

  1. Microwave cauliflower according to package directions; stir in dill and salt.
  2. Cook peas according to package directions.
