Greek Spinach and Feta Quiche

Ingredients

  • 1½ cups almond flour
  • ¾ tsp salt, divided
  • ¼ cup butter, melted 
  • 1½ cups thinly sliced zucchini
  • ½ cup chopped onion
  • ½ cup chopped red bell pepper
  • 1½ tsp olive oil 
  • ½ (10-oz) pkg frozen chopped spinach, thawed and well drained
  • 1 clove garlic, minced
  • ½ cup crumbled feta cheese, divided
  • 2 large eggs, lightly beaten
  • ½ cup milk

Instructions

  1. Preheat oven to 350°F. Whisk together almond flour and ½ tsp salt. Stir in butter until mixture resembles coarse crumbs.
  2. Using your hands, press firmly into bottom and up sides of a pie plate; refrigerate 15 minutes.
  3. Meanwhile, cook zucchini, onion, and bell pepper in hot oil in a large nonstick skillet over medium-high heat 6 minutes. Add spinach, garlic, and ⅛ tsp salt; cook 2 minutes. Spoon vegetable mixture into crust; top with ¼ cup cheese.
  4. Combine eggs, milk, and ⅛ tsp salt; pour over vegetable mixture.
  5. Bake 30 minutes or until a knife inserted in center comes out clean.
  6. Let stand 15 minutes before serving. Top with ¼ cup cheese.
