Greek Salad with Tuna

Ingredients

  • 5 Tbsp olive oil
  • 1 tsp lemon zest
  • 3 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 4 (5-oz) cans wild caught tuna packed in water, drained and flaked
  • 1 (10-oz) pkg chopped romaine lettuce
  • 3 tomatoes, cut into wedges
  • 1 English cucumber, sliced
  • ½ cup pitted kalamata olives
  • ½ cup crumbled feta cheese
  • ¼ cup thinly sliced red onion
  • ¼ tsp pepper

Instructions

  1. Whisk together oil, lemon zest, lemon juice, and garlic; toss tuna with 3 Tbsp dressing.
  2. Arrange lettuce on 4 plates; top with tuna, tomatoes, cucumber, olives, cheese, and onion. Season with pepper.
  3. Drizzle with remaining dressing.
