Beef "Tacos"

Mango Salsa

Ingredients

  • 1½ lb lean ground beef
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 8 romaine lettuce leaves, cut in half crosswise
  • Mango Salsa (recipe follows)

Instructions

  1. Cook beef, chili powder, cumin, salt, and pepper in a large nonstick skillet over medium heat 8 minutes or until meat is no longer pink.
  2. For saucier meat, add 2 to 3 Tbsp water, if desired.
  3. For each taco, stack 2 lettuce leaves; fill with beef mixture, and top with Mango Salsa.

Side Dish Ingredients

  • 1 small mango, chopped
  • 2 tomatoes, chopped
  • ¼ cup diced red onion
  • 1 small red bell pepper, diced
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp lime juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Mix together all ingredients in a large bowl.
