Beef "Tacos"
Mango SalsaIngredients
- 1½ lb lean ground beef
- 2 tsp chili powder
- 2 tsp ground cumin
- ½ tsp salt
- ¼ tsp pepper
- 8 romaine lettuce leaves, cut in half crosswise
- Mango Salsa (recipe follows)
Instructions
- Cook beef, chili powder, cumin, salt, and pepper in a large nonstick skillet over medium heat 8 minutes or until meat is no longer pink.
- For saucier meat, add 2 to 3 Tbsp water, if desired.
- For each taco, stack 2 lettuce leaves; fill with beef mixture, and top with Mango Salsa.
Side Dish Ingredients
- 1 small mango, chopped
- 2 tomatoes, chopped
- ¼ cup diced red onion
- 1 small red bell pepper, diced
- ¼ cup chopped fresh cilantro
- 2 Tbsp lime juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Mix together all ingredients in a large bowl.
