Cheesy Corn Chip Pie Bowls
Watermelon 'n Blueberry ChillIngredients
- 1½ lb ground beef (or use ground turkey or ground chicken)
- 2 cloves garlic, minced
- 1 (1-oz) envelope taco seasoning mix
- 2 (15-oz) cans tomato sauce
- 1 (15.5-oz) can chili beans, drained
- 1 (10.5-oz) pkg corn chips
- 2 cups shredded Cheddar cheese
Instructions
- Cook beef and garlic in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
- Stir in taco seasoning mix, tomato sauce, and beans; bring to a boil, reduce heat, and simmer 5 to 10 minutes.
- Divide corn chips among bowls; top with beef mixture and cheese.

- 3 cups small watermelon chunks (or use cantaloupe)
- 1 cup blueberries
- 3 Tbsp honey
- 1 Tbsp lime juice
