Cheesy Corn Chip Pie Bowls

Ingredients

  • 1½ lb ground beef (or use ground turkey or ground chicken)
  • 2 cloves garlic, minced
  • 1 (1-oz) envelope taco seasoning mix
  • 2 (15-oz) cans tomato sauce
  • 1 (15.5-oz) can chili beans, drained
  • 1 (10.5-oz) pkg corn chips
  • 2 cups shredded Cheddar cheese

Instructions

  1. Cook beef and garlic in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  2. Stir in taco seasoning mix, tomato sauce, and beans; bring to a boil, reduce heat, and simmer 5 to 10 minutes.
  3. Divide corn chips among bowls; top with beef mixture and cheese.

Side Dish Ingredients

  • 3 cups small watermelon chunks (or use cantaloupe)
  • 1 cup blueberries
  • 3 Tbsp honey
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Toss together all ingredients; chill until ready to serve.
