Sheet Pan Sticky Chicken and Vegetables

Ingredients

  • ¾ lb chicken tenderloins
  • 1 (12-oz) pkg vegetable stir-fry medley
  • ½ onion, thinly sliced
  • 2 cloves garlic, minced
  • 3 Tbsp soy sauce
  • 3 Tbsp brown sugar
  • 2 Tbsp sesame oil
  • 1 tsp Sriracha hot sauce

Instructions

  1. Preheat oven to 400°F. Toss together all ingredients in a large bowl. Spread in a single layer on a greased foil-lined rimmed baking sheet.
  2. Bake 20 to 25 minutes or until chicken is done and vegetables are browned.

  • ¾ cup long-grain white rice
  • 2 green onions, chopped

Side Dish Instructions

  1. Cook rice according to package directions; stir in onions, and season with salt and pepper to taste.
