Blackened Shrimp

Pineapple-Coconut Rice and Black Beans

Ingredients

  • 2 lb peeled and deveined large shrimp
  • ¼ cup blackened seasoning
  • 3 Tbsp butter
  • 3 Tbsp olive oil
  • 2 limes, cut into wedges

Instructions

  1. Coat shrimp with blackened seasoning.
  2. Melt butter with oil in a large nonstick skillet over medium heat; add shrimp. Cook 2 to 3 minutes or until shrimp turn pink. Serve with lime wedges.

  • 2 (8.5-oz) pouches microwavable coconut-jasmine rice
  • 1 (8-oz) can pineapple tidbits, drained
  • 2 (15-oz) cans black beans

Side Dish Instructions

  1. Heat rice according to package directions. Stir in pineapple.
  2. Heat beans according to package directions.
