Pork Chops Sorrento

Ingredients

  • 2 lb boneless pork chops
  • 2 Tbsp olive oil
  • 1 (16-oz) bottle creamy Italian dressing
  • 1 (16-oz) pkg frozen stir-fry vegetables
  • 1 (32-oz) carton refrigerated garlic mashed potatoes

Instructions

  1. Season pork with salt and pepper. Cook pork in hot oil in a large nonstick skillet over medium-high heat 2 minutes per side.
  2. Add dressing; cover, reduce heat, and simmer 2 minutes.
  3. Add frozen vegetables; cover, and cook 5 minutes or until pork is done and vegetables are crisp-tender. Season with salt and pepper to taste.
  4. Meanwhile, heat potatoes according to package directions. Serve pork and vegetables with potatoes.
