Basil Sauce Chicken

Angel Hair Pasta and Steamed Asparagus

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 3 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 1 cup heavy cream
  • ½ cup shredded Parmesan cheese
  • ½ cup chopped fresh basil

Instructions

  1. Cut chicken in half crosswise, and pound to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until browned; remove chicken from skillet .
  3. Add garlic; cook 30 seconds. Add cream, cheese, and basil; bring to a boil, reduce heat, and simmer. Return chicken to skillet, and simmer 3 minutes or until sauce is thickened.

  • 1 (16-oz) pkg angel hair pasta
  • 2 (6-oz) pkg asparagus tips

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Steam asparagus according to package directions.
