Ingredients

  • 1 avocado, pitted and mashed
  • 2 Tbsp reduced-fat mayonnaise
  • 1 tsp fresh lemon juice
  • 8 (1-oz) slices whole-grain sandwich bread, toasted
  • 1½ cups shredded rotisserie chicken (without skin) 
  • 4 slices center-cut bacon, cooked
  • 1 tomato, sliced
  • 4 leaves green leaf lettuce

Instructions

  1. Stir together avocado, mayonnaise, and lemon juice; spread over bread slices.
  2. Layer 4 bread slices with chicken, bacon, tomato, and lettuce; top with remaining bread slices, avocado sides down. Cut in half diagonally.

  • 4 cups cubed watermelon
  • 2 Tbsp chopped fresh mint
