Turkey and Waffle Monte Cristo Sandwiches

Ingredients

  • 1 (16-oz) pkg bacon
  • 1 cup raspberry jam (or use strawberry jam, jelly, or preserves)
  • 12 frozen waffles
  • 1 lb thin sliced deli turkey
  • 1 (8-oz) pkg sliced mozzarella cheese
  • 4 large eggs
  • ½ cup milk
  • 6 Tbsp butter, divided
  • Powdered sugar (optional)

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp; drain on paper towels, and wipe skillet clean.
  2. Spread raspberry jam over 1 side of each waffle. Top with turkey, bacon, and cheese; cover with remaining waffles, jam side down, to make sandwiches.
  3. Whisk together eggs and milk in a shallow dish.
  4. Melt 2 Tbsp butter in same skillet over medium heat. Dip 2 sandwiches in egg mixture to coat, letting excess drip off.
  5. Add 2 sandwiches to skillet; cook 3 to 4 minutes per side or until waffles are toasted and cheese is melted. Repeat with remaining butter and sandwiches. Cut sandwiches in half; sprinkle with powdered sugar, if desired.
