Pecan-Crusted Cod
Mashed Sweet Potatoes and Lemon-Parmesan BroccoliIngredients
- 2 (6-oz) cod fillets (or other lean white fish)
- 1 large egg
- ½ cup finely chopped pecans
Instructions
- Preheat oven to 350°F. Lightly season fish with salt and pepper.
- Whisk egg in a shallow dish; place pecans in a separate shallow dish.
- Dip fish in egg; dredge in nuts, pressing gently to adhere. Place on a lightly greased baking sheet. Bake 10 minutes or until fish flakes with a fork.

- 1 (24-oz) carton mashed sweet potatoes
- 1 (12-oz) pkg broccoli florets
- 3 Tbsp grated Parmesan cheese
- ½ tsp lemon pepper seasoning
Side Dish Instructions
- Heat potatoes according to package directions.
- Meanwhile, steam broccoli according to package directions. Toss with cheese and seasoning.
