Pecan-Crusted Cod

Mashed Sweet Potatoes and Lemon-Parmesan Broccoli

Ingredients

  • 2 (6-oz) cod fillets (or other lean white fish)
  • 1 large egg
  • ½ cup finely chopped pecans

Instructions

  1. Preheat oven to 350°F. Lightly season fish with salt and pepper.
  2. Whisk egg in a shallow dish; place pecans in a separate shallow dish.
  3. Dip fish in egg; dredge in nuts, pressing gently to adhere. Place on a lightly greased baking sheet. Bake 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 (24-oz) carton mashed sweet potatoes
  • 1 (12-oz) pkg broccoli florets
  • 3 Tbsp grated Parmesan cheese
  • ½ tsp lemon pepper seasoning

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Meanwhile, steam broccoli according to package directions. Toss with cheese and seasoning.
