Marinated Spicy Flank Steak
Tomato-Onion Salad with Cilantro-Lime DressingIngredients
- 1 clove garlic, minced
- 1 Tbsp ground chipotle chile pepper
- 1 Tbsp dried oregano
- ½ Tbsp ground cumin
- 1 Tbsp avocado oil
- 1 lb flank steak
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Combine garlic, chipotle pepper, oregano, cumin, and oil; rub all over steak. Seal in a zip-top plastic freezer bag, and chill overnight.
- Preheat grill to medium-high heat. Sprinkle steak with salt and pepper. Grill, covered, 6 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.

- 1 large heirloom tomato, sliced
- ½ cup thinly sliced onion
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp lime juice
- 1 Tbsp extra virgin olive oil
- ¼ tsp ground cumin
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Place tomato and onion on a platter. Combine cilantro, lime juice, oil, cumin, salt, and pepper; drizzle over tomato.
