Marinated Spicy Flank Steak

Tomato-Onion Salad with Cilantro-Lime Dressing

Ingredients

  • 1 clove garlic, minced
  • 1 Tbsp ground chipotle chile pepper
  • 1 Tbsp dried oregano
  • ½ Tbsp ground cumin
  • 1 Tbsp avocado oil
  • 1 lb flank steak
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Combine garlic, chipotle pepper, oregano, cumin, and oil; rub all over steak. Seal in a zip-top plastic freezer bag, and chill overnight.
  2. Preheat grill to medium-high heat. Sprinkle steak with salt and pepper. Grill, covered, 6 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.

  • 1 large heirloom tomato, sliced
  • ½ cup thinly sliced onion
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp ground cumin
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Place tomato and onion on a platter. Combine cilantro, lime juice, oil, cumin, salt, and pepper; drizzle over tomato.
