Old-Fashioned Banana Pudding

Ingredients

  • 8 bananas, divided
  • 1¼ cups sugar
  • ½ cup all-purpose flour
  • ½ tsp salt
  • 4½ cups milk
  • 8 egg yolks
  • 3 Tbsp butter
  • 1 tsp vanilla extract
  • 1 (12-oz) pkg vanilla wafers
  • 1 (16-oz) carton frozen whipped topping, thawed
  • Garnish: crumbled vanilla wafers

Instructions

  1. Slice 4 bananas.
  2. Whisk together sugar, flour, and salt in a saucepan. Whisk together milk and egg yolks in a bowl; add to sugar mixture, whisking until smooth.
  3. Cook over medium heat, stirring constantly, 8 to 10 minutes or until very thick. Remove from heat; whisk in butter and vanilla until butter is melted.
  4. Layer half of wafers, half of custard, and sliced bananas in a 3-quart baking dish; top with remaining wafers and custard. Cover tightly with plastic wrap, and chill 4 hours to 2 days.
  5. Slice 4 bananas. Top pudding with banana slices and whipped topping before serving. Garnish, if desired. Makes 12 to 15 servings.
