Ingredients

  • 1½ lb thin-sliced loin pork chops
  • ½ cup all-purpose flour
  • ¼ cup vegetable oil, divided
  • ¾ cup low-sodium chicken broth
  • ¼ cup lemon juice

Instructions

  1. Dredge pork in flour, shaking off excess.
  2. Cook pork, in batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 3 minutes per side or until done; remove from skillet.
  3. Add broth and lemon juice to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Spoon over pork chops.

  • 1 (10-oz) pkg plain couscous
  • 3 Roma tomatoes, chopped
  • ½ cup crumbled feta cheese
  • ¾ tsp salt, divided
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Prepare couscous according to package directions. Add tomatoes, feta, and ½ tsp salt; toss.
  2. Steam green beans according to package directions; sprinkle with ¼ tsp salt.
