Shrimp, Tomato, and Spinach Pasta

Ingredients

  • 1 (16-oz) pkg whole-grain linguine or fettuccine
  • 2 lb peeled and deveined, medium-size raw shrimp (or use frozen)
  • 2 pints grape tomatoes
  • 2 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 3 Tbsp lemon juice
  • 1 (10-oz) pkg baby spinach (or use frozen spinach)

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, sauté shrimp, tomatoes, and garlic in hot oil in a large nonstick skillet over medium heat 3 minutes or until shrimp begin to turn pink and tomatoes soften.
  3. Stir in lemon juice. Gradually stir in spinach until wilted. Toss with hot cooked pasta.
