Grilled Cajun Chicken
Fried Okra, Sliced Tomatoes, and Cornbread
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 2 Tbsp Cajun seasoning
- ½ tsp garlic powder
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Rub with oil, and sprinkle with Cajun seasoning and garlic powder.
- Grill chicken on greased grill rack, covered, 5 to 6 minutes per side or until done.

- 2 (12-oz) pkg frozen breaded fried okra
- 3 tomatoes, sliced
- 2 (8-oz) pkg cornbread mix
Side Dish Instructions
- Fry or bake okra according to package directions.
- Season tomatoes lightly with salt and pepper.
- Bake cornbread according to package directions.
