Hawaiian Barbecue Pizzas

Ingredients

  • 8 slices bacon, chopped
  • 2 (10-inch) prebaked pizza crusts
  • ⅔ cup barbecue sauce
  • 4 cups shredded mozzarella cheese
  • 1 (6-oz) pkg Canadian bacon, chopped
  • ½ cored pineapple, drained and finely chopped

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Preheat grill to medium-high heat. Grill pizza crusts 3 minutes. Spread barbecue sauce on crusts. Top each with 1 cup cheese, bacon, Canadian bacon, and pineapple. Sprinkle with remaining cheese.
  3. Grill 6 to 8 minutes or until cheese is melted.

Side Dish Ingredients

  • 1 cup pineapple yogurt (or use vanilla yogurt)
  • 2 Tbsp sugar
  • ⅛ tsp salt
  • 1 lb carrots, grated or shredded
  • ½ cored pineapple, drained and chopped
  • ½ cup raisins

Side Dish Instructions

  1. Mix together yogurt, sugar, and salt in a bowl.
  2. Stir in carrots, pineapple, and raisins until blended. If desired, chill several hours.
