Chili-Cheese Sweet Potato Fries

Ingredients

  • 2 (20-oz) pkg frozen sweet potato fries
  • 1 Tbsp olive oil
  • 1 (14.7-oz) can vegetarian chili (or use any chili)
  • 1½ cups shredded white Cheddar cheese (or use mozzarella)
  • 1 (8-oz) carton sour cream (optional)

Instructions

  1. Place fries on a large rimmed baking sheet; toss with oil and desired amount of salt and pepper.
  2. Bake according to package directions until crisp.
  3. Meanwhile, cook chili in a small saucepan over medium heat 3 to 5 minutes or until heated.
  4. Divide fries among 6 plates; top with chili, cheese, and, if desired, a dollop of sour cream.

Side Dish Ingredients

  • 2 cups sliced strawberries
  • 2 cups sliced peaches
  • 1 (16-oz) carton plain or vanilla Greek yogurt
  • ¼ cup orange juice
  • 2 Tbsp honey
  • Ice cubes

Side Dish Instructions

  1. Process 1 cup strawberries, 1 cup peaches, half of yogurt, 2 Tbsp orange juice, 1 Tbsp honey and a handful of ice cubes in a blender until smooth.
  2. Pour smoothie into 3 small glasses; repeat with remaining ingredients.
