Apple and Cheddar Grilled Cheese

Ingredients
- 1 tsp yellow mustard (or use Dijon mustard)
- 1½ Tbsp mayonnaise
- 4 slices sandwich bread
- 1 cup shredded Cheddar cheese
- ½ small apple, peeled, cored and thinly sliced (or shred the apple)
- 1 Tbsp butter
Instructions
- Combine mustard and mayonnaise in a bowl; spread on bread slices.
- Sprinkle cheese over mayo on 2 bread slices. Arrange apple slices on cheese; top with 2 bread slices.
- Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat. Place sandwiches in skillet; cook 2 to 3 minutes per side or until golden brown and cheese melts. Cut sandwiches in half.
Side Dish Ingredients
- ½ (6-oz) pkg baby greens salad
- ¼ cup Ranch dressing
- ½ (5-oz) pkg croutons
- 2 Tbsp sunflower seeds
- 2 fruit cups
Side Dish Instructions
- Toss salad with dressing, croutons, and sunflower seeds. Serve with fruit cups on each plate.
