Apple and Cheddar Grilled Cheese

Ingredients

  • 1 tsp yellow mustard (or use Dijon mustard)
  • 1½ Tbsp mayonnaise
  • 4 slices sandwich bread
  • 1 cup shredded Cheddar cheese
  • ½ small apple, peeled, cored and thinly sliced (or shred the apple)
  • 1 Tbsp butter

Instructions

  1. Combine mustard and mayonnaise in a bowl; spread on bread slices.
  2. Sprinkle cheese over mayo on 2 bread slices. Arrange apple slices on cheese; top with 2 bread slices.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat. Place sandwiches in skillet; cook 2 to 3 minutes per side or until golden brown and cheese melts. Cut sandwiches in half.

Side Dish Ingredients

  • ½ (6-oz) pkg baby greens salad
  • ¼ cup Ranch dressing
  • ½ (5-oz) pkg croutons
  • 2 Tbsp sunflower seeds
  • 2 fruit cups

Side Dish Instructions

  1. Toss salad with dressing, croutons, and sunflower seeds. Serve with fruit cups on each plate.
