Barbecue Flank Steak and Corn Salad

Ingredients

  • 1 (¾-lb) flank steak 
  • 6 Tbsp sweet barbecue sauce, divided
  • 1 ear corn, shucked
  • 1 avocado, diced
  • 1 Roma tomato, diced 

Instructions

  1. Preheat grill to medium-high heat. Brush steak with ¼ cup barbecue sauce. Add steak to grill; grill steak 4 minutes per side or to desired doneness, brushing with remaining sauce during last 2 minutes of grilling. Let stand 10 minutes before thinly slicing across the grain.
  2. Grill corn 10 to 12 minutes or until tender, turning occasionally .
  3. Cut corn kernels off cob; discard cob. Toss corn kernels with avocado and tomato. Serve with steak.

  • 1 (12-oz) pkg frozen mashed cauliflower
  • ¼ cup shredded sharp Cheddar cheese
  • 1 green onion, chopped 

Side Dish Instructions

  1. Microwave cauliflower according to package directions. Stir in cheese and onions .
