Barbecue Flank Steak and Corn Salad
Cheesy Cauliflower MashIngredients
- 1 (¾-lb) flank steak
- 6 Tbsp sweet barbecue sauce, divided
- 1 ear corn, shucked
- 1 avocado, diced
- 1 Roma tomato, diced
Instructions
- Preheat grill to medium-high heat. Brush steak with ¼ cup barbecue sauce. Add steak to grill; grill steak 4 minutes per side or to desired doneness, brushing with remaining sauce during last 2 minutes of grilling. Let stand 10 minutes before thinly slicing across the grain.
- Grill corn 10 to 12 minutes or until tender, turning occasionally .
- Cut corn kernels off cob; discard cob. Toss corn kernels with avocado and tomato. Serve with steak.

- 1 (12-oz) pkg frozen mashed cauliflower
- ¼ cup shredded sharp Cheddar cheese
- 1 green onion, chopped

- Microwave cauliflower according to package directions. Stir in cheese and onions .
