Ingredients
- 3 (6-oz) wild-caught salmon fillets, skin removed
- 3 limes, halved
- ¾ tsp salt, divided
- 3 (5-oz) pkg spring mix
- 3 avocados, diced
- 3 mangoes, peeled and sliced
- 1 red onion, thinly sliced
- ⅓ cup canola oil
- 3 Tbsp balsamic vinegar
Instructions
- Preheat grill to medium-high heat. Squeeze lime juice over fillets; sprinkle with ¼ tsp salt.
- Grill salmon 6 minutes per side or until fish flakes with a fork. Flake salmon into a bowl; set aside.
- Combine salad greens, avocado, mango, and onion; gently toss.
- Whisk together oil, vinegar and ½ tsp salt; drizzle over salad. Top with flaked salmon.
