Portobello-Goat Cheese Panini
Spinach Salad with Oranges
Ingredients
- 6 portobello mushroom caps, gills removed
- 2 red bell peppers, halved and seeded
- ⅓ cup balsamic vinegar
- 1½ Tbsp canola oil
- 3 cloves garlic, minced
- 6 (1.5-oz) whole wheat hamburger buns
- ⅓ cup chopped fresh basil
- ¼ tsp salt
- ½ tsp pepper
- 1 (3.5-oz) pkg crumbled goat cheese
Instructions
- Combine mushrooms, bell pepper, vinegar, oil and garlic in a bowl; toss.
- Preheat grill to medium-high heat. Grill vegetables 4 minutes per side or until mushrooms are tender and peppers are slightly charred.
- Cut pepper into thin strips and toss with basil, salt and pepper.
- Grill buns, cut sides down, 1 minute. Spread goat cheese on buns.
- Place mushrooms on buns; top with bell pepper mixture. Cover with bun tops.
- Place sandwiches on grill; flatten slightly, and grill 1 minute per side to toast.
Side Dish Ingredients
- 9 cups spinach
- ⅓ cup chopped red onion
- 3 oranges, peeled and sectioned
- 3 Tbsp canola oil
- 3 Tbsp apple cider vinegar
- 1 Tbsp honey
- ½ tsp salt
Side Dish Instructions
- Combine spinach, onion, and oranges in a bowl.
- Whisk together oil, vinegar, honey, and salt; drizzle over salad.
