Avocado-Egg Salad Toasts

Ingredients

  • 8 large hard-cooked eggs
  • 2 avocados, chopped
  • 3 Tbsp olive-oil mayonnaise
  • 1 Tbsp white vinegar
  • 2 green onions, chopped
  • ½ cup chopped organic celery
  • ½ tsp salt
  • ½ tsp pepper
  • 6 slices whole wheat bread, toasted

Instructions

  1. Peel eggs, and coarsely chop; transfer to a bowl.
  2. Stir in avocado, mayonnaise, vinegar, onions, celery, salt, and pepper.
  3. Place toast on plates. Divide egg salad mixture among toast on each plate.

Side Dish Ingredients

  • 2 pints organic grape tomatoes
  • 1 (8-oz) ball fresh mozzarella cheese, cubed
  • ½ cup fresh basil leaves
  • 3 Tbsp olive oil
  • 3 Tbsp balsamic vinegar

Side Dish Instructions

  1. Combine all ingredients in a bowl. Chill until ready to serve.
