Avocado-Egg Salad Toasts
Quick Caprese Toss
Ingredients
- 8 large hard-cooked eggs
- 2 avocados, chopped
- 3 Tbsp olive-oil mayonnaise
- 1 Tbsp white vinegar
- 2 green onions, chopped
- ½ cup chopped organic celery
- ½ tsp salt
- ½ tsp pepper
- 6 slices whole wheat bread, toasted
Instructions
- Peel eggs, and coarsely chop; transfer to a bowl.
- Stir in avocado, mayonnaise, vinegar, onions, celery, salt, and pepper.
- Place toast on plates. Divide egg salad mixture among toast on each plate.
Side Dish Ingredients
- 2 pints organic grape tomatoes
- 1 (8-oz) ball fresh mozzarella cheese, cubed
- ½ cup fresh basil leaves
- 3 Tbsp olive oil
- 3 Tbsp balsamic vinegar
Side Dish Instructions
- Combine all ingredients in a bowl. Chill until ready to serve.
