Onion-Carrot Bison Meat Loaf
Pan-Roasted Asparagus and Mushrooms
Ingredients
- 1½ lb ground bison (or use grass-fed ground beef)
- ½ onion, finely chopped
- 4 carrots, grated
- 1 (6-oz) can tomato paste
- ¼ cup almond flour
- 2 large eggs, lightly beaten
- 2 tsp dried rosemary
- 1 tsp garlic salt
- 1 tsp pepper
Instructions
- Preheat oven to 350°F. Combine all ingredients in a large bowl. Mix until just combined. Shape into a loaf; place on a rack in a broiler pan coated with avocado oil.
- Bake 1 hour and 15 minutes or until no longer pink and a meat thermometer inserted in center should read at least 165°F; cover with foil near end of baking, if needed.
Side Dish Ingredients
- 1 (8-oz) pkg sliced mushrooms
- 3 Tbsp avocado oil, divided
- 1½ lb asparagus, trimmed
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook mushrooms in 2 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes, stirring occasionally.
- Add 1 Tbsp oil, asparagus, garlic, salt, and pepper; cook 5 minutes or until asparagus is crisp-tender, stirring often.
