Onion-Carrot Bison Meat Loaf

Pan-Roasted Asparagus and Mushrooms

Ingredients

  • 1½ lb ground bison (or use grass-fed ground beef)
  • ½ onion, finely chopped
  • 4 carrots, grated
  • 1 (6-oz) can tomato paste
  • ¼ cup almond flour
  • 2 large eggs, lightly beaten
  • 2 tsp dried rosemary
  • 1 tsp garlic salt
  • 1 tsp pepper

Instructions

  1. Preheat oven to 350°F. Combine all ingredients in a large bowl. Mix until just combined. Shape into a loaf; place on a rack in a broiler pan coated with avocado oil.
  2. Bake 1 hour and 15 minutes or until no longer pink and a meat thermometer inserted in center should read at least 165°F; cover with foil near end of baking, if needed.

Side Dish Ingredients

  • 1 (8-oz) pkg sliced mushrooms
  • 3 Tbsp avocado oil, divided
  • 1½ lb asparagus, trimmed
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook mushrooms in 2 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes, stirring occasionally.
  2. Add 1 Tbsp oil, asparagus, garlic, salt, and pepper; cook 5 minutes or until asparagus is crisp-tender, stirring often.
