Ingredients
- 2 tomatoes, diced
- ½ onion, thinly sliced
- 2 Tbsp capers
- ¼ cup thinly sliced fresh basil
- 2 Tbsp lemon juice
- 6 frozen tilapia fillets, thawed
Instructions
- Preheat oven to 475°F. Toss together tomatoes, onion, capers, basil, and lemon juice. Season lightly with salt and pepper.
- Place fish on a lightly greased rimmed baking sheet; season lightly with salt and pepper. Spread tomato mixture over fish.
- Bake 10 minutes or until fish flakes with a fork.

- 1 lb asparagus, trimmed
- 2 Tbsp olive oil

- Cook rice according to package directions.
