Ingredients

  • 2 tomatoes, diced
  • ½ onion, thinly sliced
  • 2 Tbsp capers
  • ¼ cup thinly sliced fresh basil
  • 2 Tbsp lemon juice
  • 6 frozen tilapia fillets, thawed

Instructions

  1. Preheat oven to 475°F. Toss together tomatoes, onion, capers, basil, and lemon juice. Season lightly with salt and pepper.
  2. Place fish on a lightly greased rimmed baking sheet; season lightly with salt and pepper. Spread tomato mixture over fish.
  3. Bake 10 minutes or until fish flakes with a fork.
