Lemon-Pepper Grilled Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 2 Tbsp lemon-pepper seasoning

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Brush with oil; sprinkle with lemon-pepper seasoning.
  2. Grill chicken, covered, 6 minutes per side or until done.

  • 1 (10-oz) box plain couscous
  • 2 Roma tomatoes, chopped
  • 1 cup shredded mozzarella cheese
  • 1 (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Prepare couscous according to package directions. Add tomatoes, cheese, and salt and pepper to taste.
  2. Steam green beans according to package directions.
