Lemon-Pepper Grilled Chicken
Cheesy Tomato Couscous and Steamed Green Beans
Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 2 Tbsp lemon-pepper seasoning
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Brush with oil; sprinkle with lemon-pepper seasoning.
- Grill chicken, covered, 6 minutes per side or until done.

- 1 (10-oz) box plain couscous
- 2 Roma tomatoes, chopped
- 1 cup shredded mozzarella cheese
- 1 (16-oz) pkg frozen green beans
Side Dish Instructions
- Prepare couscous according to package directions. Add tomatoes, cheese, and salt and pepper to taste.
- Steam green beans according to package directions.
