Shepherd’s Pie Bowls
Rosemary Mashed PotatoesIngredients
- 1 lb ground chicken (or use ground turkey)
- ½ (12-oz) pkg frozen peas and carrots
- ½ onion, chopped
- ¼ tsp dried crushed rosemary
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ½ cup low-sodium chicken broth
- 1 Tbsp all-purpose flour
Instructions
- Cook chicken, peas, carrots, onion, rosemary, salt, and pepper in hot oil in a large skillet over medium-high heat 10 to 12 minutes or until browned.
- Whisk together broth and flour; add to skillet. Cook 6 to 8 minutes or until thickened. Serve chicken mixture over Rosemary Mashed Potatoes recipe.
Side Dish Ingredients
- 1 lb small red potatoes
- ¾ cup sour cream
- ¾ tsp dried crushed rosemary
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a large saucepan. Cook 12 to 14 minutes or until tender; drain well, and return to pan.
- Add sour cream, rosemary, salt, and pepper to potatoes; mash with a potato masher to desired smoothness.
