Creamy Turmeric Chicken

Ingredients

  • ¾ lb boneless, skinless chicken thighs, cubed
  • 1 small onion, chopped
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 1½ tsp ground turmeric
  • ¼ tsp garlic powder
  • 6 Tbsp low-sodium chicken broth
  • 6 Tbsp heavy cream
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook chicken, onion, salt, and pepper in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Stir in turmeric and garlic powder.
  2. Add broth and cream to skillet; cook 5 to 6 minutes or until sauce is thickened and chicken is done. Top with cilantro.

Side Dish Ingredients

  • 1 (3.5-oz) pouch boil-in-bag brown rice 
  • ½ (12-oz) pkg frozen green peas
  • 2 green onions, thinly sliced
  • 2 Tbsp pine nuts (or use walnuts)
  • ¼ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook peas according to package directions. Combine rice, peas, onions, nuts, and salt.
