Kung Pao Ground Beef

Ingredients

  • ½ Tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 Tbsp canola oil
  • 1 lb ground beef (or use ground turkey)
  • ¼ lb green beans, trimmed and cut into 1-inch pieces
  • 1½ Tbsp low-sodium soy sauce
  • ½ Tbsp sesame oil
  • ¼ cup water
  • 1½ tsp cornstarch (or use arrowroot)
  • ½ (8-oz) can sliced water chestnuts, drained

Instructions

  1. Sauté ginger and garlic in hot canola oil in a skillet over medium-high heat 2 minutes; add beef, and sauté 4 minutes. Add green beans. Sauté 4 minutes or until beef is browned and crumbly and beans are tender.
  2. Stir together soy sauce, sesame oil, water, and cornstarch in a small bowl. Pour sauce and water chestnuts into skillet, stirring to coat beef. Cook 1 to 2 minutes, stirring gently, until thickened. Serve over Cauliflower Rice recipe.

  • 1 (10-oz) pkg frozen riced cauliflower
  • ½ tsp kosher salt

Side Dish Instructions

  1. Cook cauliflower rice in microwave according to package directions. Transfer to a bowl; sprinkle with salt.
