Black-Eyed Pea Cakes

Ingredients

  • 3 (15-oz) cans no-salt-added black-eyed peas, drained and rinsed
  • 2 cups panko breadcrumbs
  • ¾ cup finely chopped red onion
  • 3 large eggs, lightly beaten
  • 1½ Tbsp chopped fresh basil, divided
  • 3 cloves garlic, minced
  • ¾ tsp salt
  • ½ tsp pepper
  • 3 Tbsp canola oil, divided

Instructions

  1. Mash peas using a potato masher in a large bowl; stir in panko, onion, eggs, 1 Tbsp basil, garlic, salt and pepper; shape into 12 patties, and chill 10 minutes.
  2. Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned and thoroughly heated. Serve sprinkled with ½ Tbsp basil.

Side Dish Ingredients

  • 1½ lb asparagus, trimmed
  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp apple cider vinegar
  • ½ tsp salt

Side Dish Instructions

  1. Wrap asparagus in damp paper towels and place in a microwave-safe dish. Microwave at HIGH power 4 to 5 minutes or until crisp-tender. Serve drizzled with oil and vinegar; sprinkle with salt.
