Black-Eyed Pea Cakes
Steamed Asparagus
Ingredients
- 3 (15-oz) cans no-salt-added black-eyed peas, drained and rinsed
- 2 cups panko breadcrumbs
- ¾ cup finely chopped red onion
- 3 large eggs, lightly beaten
- 1½ Tbsp chopped fresh basil, divided
- 3 cloves garlic, minced
- ¾ tsp salt
- ½ tsp pepper
- 3 Tbsp canola oil, divided
Instructions
- Mash peas using a potato masher in a large bowl; stir in panko, onion, eggs, 1 Tbsp basil, garlic, salt and pepper; shape into 12 patties, and chill 10 minutes.
- Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned and thoroughly heated. Serve sprinkled with ½ Tbsp basil.
Side Dish Ingredients
- 1½ lb asparagus, trimmed
- 3 Tbsp extra virgin olive oil
- 3 Tbsp apple cider vinegar
- ½ tsp salt
Side Dish Instructions
- Wrap asparagus in damp paper towels and place in a microwave-safe dish. Microwave at HIGH power 4 to 5 minutes or until crisp-tender. Serve drizzled with oil and vinegar; sprinkle with salt.
