Greek Shrimp-Couscous Salad
Ingredients
- 1½ cups whole wheat pearl couscous
- 1½ lb peeled and deveined, wild-caught raw shrimp
- ⅓ cup red wine vinegar
- 3 Tbsp extra virgin olive oil
- 2 Tbsp dried oregano
- 1½ tsp garlic powder
- 6 cups torn green leaf lettuce
- ¾ cup finely chopped red onion
- ¾ cup crumbled reduced-fat feta
Instructions
- Cook couscous according to package directions, adding the shrimp during last 4 minutes of cooking. Drain and run under cold water to cool.
- Combine vinegar, oil, oregano, and garlic powder in a serving bowl. Add couscous mixture, lettuce, onion, and cheese; toss.
