Spinach-Apple Turkey Burgers

Ingredients
- ½ cup chopped red onion
- 1 small apple, finely chopped
- 1 (9-oz) pkg baby spinach
- 2 Tbsp olive oil, divided
- 1 (20-oz) pkg lean ground turkey
- 2 tsp garlic and herb seasoning
- 2 Tbsp Dijon mustard
- 6 whole wheat hamburger buns, toasted
- 3 romaine lettuce leaves, halved
- 6 thin slices tomato
Instructions
- Cook onion, apple, and spinach in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until apple is tender; slightly cool.
- Combine turkey, apple mixture, and seasoning in a large bowl; shape into 6 patties. Cook patties, in batches if necessary, in 1 Tbsp hot oil in skillet 4 to 6 minutes per side or until done.
- Spread mustard over cut sides of buns. Serve burgers in buns with lettuce and tomato.
Side Dish Ingredients
- 1 (12-oz) pkg baby carrots with tops, halved lengthwise
- 1 English cucumber, sliced
- ⅓ cup light Ranch dressing
Side Dish Instructions
- Serve vegetables with dressing for dipping.
