Ingredients

  • 2 pork tenderloins (1½ lb)
  • ½ tsp pepper
  • ¼ tsp salt
  • ½ cup whole wheat panko breadcrumbs
  • ½ cup finely chopped fresh basil
  • ¼ cup freshly grated Parmesan cheese
  • 3 Tbsp extra virgin olive oil
  • 2 tsp lemon zest

Instructions

  1. Preheat oven to 425°F. Coat pork with cooking spray and sprinkle with pepper and salt. Cook pork in a large skillet over medium-high heat 5 minutes or until browned on all sides, turning occasionally.
  2. Transfer pork to a foil-lined baking sheet. Bake 12 to 15 minutes or until a meat thermometer inserted into center reads 145°F. Meanwhile, combine panko, basil, cheese, oil, and lemon zest; serve over pork.

  • 1 cup whole wheat pearl couscous
  • 1 pint grape tomatoes, halved
  • ¼ cup freshly grated Parmesan cheese
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1 tsp garlic seasoning 

Side Dish Instructions

  1. Cook couscous according to package directions; drain, and toss with remaining ingredients in a serving bowl.
