Ingredients
- 2 pork tenderloins (1½ lb)
- ½ tsp pepper
- ¼ tsp salt
- ½ cup whole wheat panko breadcrumbs
- ½ cup finely chopped fresh basil
- ¼ cup freshly grated Parmesan cheese
- 3 Tbsp extra virgin olive oil
- 2 tsp lemon zest
Instructions
- Preheat oven to 425°F. Coat pork with cooking spray and sprinkle with pepper and salt. Cook pork in a large skillet over medium-high heat 5 minutes or until browned on all sides, turning occasionally.
- Transfer pork to a foil-lined baking sheet. Bake 12 to 15 minutes or until a meat thermometer inserted into center reads 145°F. Meanwhile, combine panko, basil, cheese, oil, and lemon zest; serve over pork.

- 1 cup whole wheat pearl couscous
- 1 pint grape tomatoes, halved
- ¼ cup freshly grated Parmesan cheese
- 2 Tbsp extra virgin olive oil
- 2 Tbsp lemon juice
- 1 tsp garlic seasoning
Side Dish Instructions
- Cook couscous according to package directions; drain, and toss with remaining ingredients in a serving bowl.
