Summer Vegetable Pasta

Ingredients

  • 1 (16-oz) pkg whole-grain penne pasta
  • ½ cup French vinaigrette, divided
  • 1 (6-oz) pkg portobello mushrooms, cleaned
  • 2 red bell peppers, halved
  • 2 ears corn, shucked
  • 3 zucchini, cut into ¼-inch-thick planks
  • 1 red onion, cut into ½-inch-thick slices
  • ½ cup chopped fresh basil

Instructions

  1. Cook pasta according to package directions. Meanwhile, preheat grill or grill pan to medium-high heat. Brush ¼ cup vinaigrette over mushrooms, bell peppers, corn, zucchini, and onion.
  2. Grill vegetables, covered, 5 to 10 minutes or until browned and tender. Cut kernels from cobs, discarding cobs. Coarsely chop mushrooms, bell peppers, zucchini, and onion.
  3. Toss together pasta, vegetables, ¼ cup vinaigrette, basil, and salt and pepper to taste in a serving bowl.
