Bang Bang Chicken
Buttery Broccoli and RiceIngredients
- 1½ lb boneless, skinless chicken breasts, cut into chunks
- ½ tsp salt
- ½ cup cornstarch
- 2 large eggs
- ½ cup low-fat buttermilk (or full fat)
- 1½ cups panko breadcrumbs
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- 1 Tbsp honey
Instructions
- Preheat oven to 450°F; place a greased rimmed baking sheet in the oven while it preheats.
- Sprinkle chicken with salt. Place cornstarch in a shallow bowl; whisk together eggs and buttermilk in a second shallow bowl. Place panko in a third shallow bowl.
- Dredge chicken in cornstarch, then in egg mixture, and finally in panko, pressing gently to adhere.
- Place chicken on preheated baking sheet; spray chicken with cooking spray.
- Bake 15 to 20 minutes or until browned and crisp and chicken is done.
- Meanwhile, stir together mayonnaise, chili sauce, and honey; drizzle sauce over chicken.

- 2 (12-oz) pkg broccoli florets
- 3 Tbsp butter, divided
- 2 (8.8-oz) pouches microwavable long-grain white rice
Side Dish Instructions
- Cook broccoli according to package directions. Toss with 2 Tbsp butter in a bowl. Season with salt to taste.
- Cook rice according to package directions; toss with 1 Tbsp butter.
