Mini Shrimp Rolls
Veggie Straws and Strawberries
Ingredients
- 2 lb peeled and deveined cooked shrimp, chopped (or use frozen shrimp)
- 1 cup minced celery
- 1 cup mayonnaise
- 1 Tbsp whole-grain mustard
- 1 tsp lemon zest
- 2 Tbsp lemon juice
- 3 green onions, minced
- 12 Hawaiian sweet mini sub rolls, split
Instructions
- Stir together shrimp, celery, mayonnaise, mustard, lemon zest, lemon juice, and onions in a large bowl; season with salt and pepper to taste. Chill up to 2 days.
- Spoon shrimp mixture into sub rolls before serving.

- 1 (14-oz) pkg veggie straws
- 1 (16-oz) pkg strawberries
Side Dish Instructions
- Cut up strawberries; chill until ready to serve. Serve veggie straws on each plate.
