Ingredients

  • 1½ cups panko breadcrumbs
  • ¾ cup mayonnaise
  • 6 (6-oz) grouper fillets (or use cod)
  • ¼ cup olive oil, divided
  • 1 (12-oz) bottle tartar sauce (or ketchup)

Instructions

  1. Place panko in a shallow bowl. Place mayonnaise in another shallow bowl.
  2. Season fish lightly with salt and pepper. Dip in mayonnaise; dredge in panko, pressing gently to adhere.
  3. Cook fish, in 2 batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 5 minutes per side or until fish flakes with a fork. Serve with tartar sauce or ketchup.

  • 2 (20-oz) pkg frozen sweet potato fries (or use other fries)
