Chicken Pita Pizzas

Ingredients

  • 6 pita bread rounds
  • 2 Tbsp olive oil
  • 3 cups shredded or chopped rotisserie chicken
  • 1 (9-oz) pkg frozen honey roasted sweet corn, thawed
  • 1 small red bell pepper, finely chopped
  • 1 Tbsp taco seasoning mix
  • 1 Tbsp butter, melted
  • 3 cups shredded mozzarella cheese (or use colby-Jack cheese)

Instructions

  1. Preheat oven to 450°F. Arrange pita rounds on a large baking sheet. Brush tops with oil.
  2. Toss together chicken, corn, bell pepper, seasoning mix, and butter in a bowl. Divide among pitas. Sprinkle with cheese.
  3. Bake 10 to 12 minutes or until cheese melts. Cut into small wedges, if desired.

  • 2 peaches
  • 1 cup blueberries
  • 1 cup sliced strawberries

Side Dish Instructions

  1. Peel and slice peaches. Toss with berries in a bowl.
