Chicken Pita Pizzas
Peaches and Berries
Ingredients
- 6 pita bread rounds
- 2 Tbsp olive oil
- 3 cups shredded or chopped rotisserie chicken
- 1 (9-oz) pkg frozen honey roasted sweet corn, thawed
- 1 small red bell pepper, finely chopped
- 1 Tbsp taco seasoning mix
- 1 Tbsp butter, melted
- 3 cups shredded mozzarella cheese (or use colby-Jack cheese)
Instructions
- Preheat oven to 450°F. Arrange pita rounds on a large baking sheet. Brush tops with oil.
- Toss together chicken, corn, bell pepper, seasoning mix, and butter in a bowl. Divide among pitas. Sprinkle with cheese.
- Bake 10 to 12 minutes or until cheese melts. Cut into small wedges, if desired.

- 2 peaches
- 1 cup blueberries
- 1 cup sliced strawberries
Side Dish Instructions
- Peel and slice peaches. Toss with berries in a bowl.
