Fried Rice Veggie Bowls
Pineapple Chunks
Ingredients
- 2 cups long-grain brown rice (or use other rice)
- 1 cup frozen sweet peas, thawed
- 1 (12-oz) pkg broccoli florets, chopped
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 green onions, chopped
- 3 Tbsp (or more) soy sauce
- 2 Tbsp rice wine vinegar
- 2 Tbsp dark sesame oil
- 2 eggs, lightly beaten
Instructions
- Cook rice according to package directions. Meanwhile, cook peas, broccoli, and garlic in hot olive oil in a large skillet over medium-high heat 10 minutes or until broccoli is tender.
- Add rice, green onions, soy sauce, vinegar, and sesame oil; cook 1 to 2 minutes. Push ingredients away from middle of skillet. Add eggs in center of skillet. Scramble and cook over medium heat. Stir into rice mixture. Add more soy sauce to taste.
