Barbecue Pork-Stuffed Baked Potatoes

Ingredients

  • 2 large russet potatoes
  • ½ (16-oz) pkg shredded barbecue pork in sauce
  • 2 Tbsp butter
  • 1 cup shredded Cheddar cheese
  • ¼ cup sour cream
  • 1 green onion, thinly sliced (optional)

Instructions

  1. Preheat oven to 400°F. Prick and place potatoes on a lightly greased baking sheet. Bake 1 hour or until very tender.
  2. Meanwhile, heat pork according to package directions.
  3. Split potatoes, and fluff with a fork; top with butter, shredded pork, cheese, sour cream, and, if desired, onion.

Side Dish Ingredients

  • ½ (12-oz) pkg mixed greens
  • 1 apple, cored and sliced
  • ¼ cup Ranch dressing

Side Dish Instructions

  1. Toss together all ingredients just before serving.
