Barbecue Pork-Stuffed Baked Potatoes
Mixed Greens and Apple Salad
Ingredients
- 2 large russet potatoes
- ½ (16-oz) pkg shredded barbecue pork in sauce
- 2 Tbsp butter
- 1 cup shredded Cheddar cheese
- ¼ cup sour cream
- 1 green onion, thinly sliced (optional)
Instructions
- Preheat oven to 400°F. Prick and place potatoes on a lightly greased baking sheet. Bake 1 hour or until very tender.
- Meanwhile, heat pork according to package directions.
- Split potatoes, and fluff with a fork; top with butter, shredded pork, cheese, sour cream, and, if desired, onion.

- ½ (12-oz) pkg mixed greens
- 1 apple, cored and sliced
- ¼ cup Ranch dressing
Side Dish Instructions
- Toss together all ingredients just before serving.
