Lemon Chicken Kabobs

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 zucchini, cut into ½-inch-thick rounds
  • ½ onion, cut into wedges
  • 1 (8-oz) pkg whole mushrooms
  • ½ cup lemon vinaigrette

Instructions

  1. Combine all ingredients in a large zip-top resealable plastic bag; seal and chill for at least 2 hours or up to 1 day.
  2. Preheat grill or grill pan to medium-high heat. Remove chicken and vegetables from marinade; discard marinade.
  3. Alternately thread chicken and vegetables onto metal or bamboo skewers. Grill kabobs, covered, 5 to 6 minutes per side or until chicken is done and vegetables are tender.

Side Dish Ingredients

  • ¾ cup long-grain white rice
  • 2 Tbsp butter, softened
  • ½ (12-oz) pkg frozen dinner rolls
  • ½ head green leaf lettuce, chopped
  • 1 cup grape tomatoes, halved
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Preheat oven to 350°F. Cook rice according to package directions; season with salt and pepper to taste.
  2. Spread butter on frozen rolls; bake according to package directions.
  3. Toss together lettuce, tomatoes, and vinaigrette just before serving.
