Lemon Chicken Kabobs
Steamed Rice and Buttery Dinner Rolls and Mixed Green Salad
Ingredients
- ¾ lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 zucchini, cut into ½-inch-thick rounds
- ½ onion, cut into wedges
- 1 (8-oz) pkg whole mushrooms
- ½ cup lemon vinaigrette
Instructions
- Combine all ingredients in a large zip-top resealable plastic bag; seal and chill for at least 2 hours or up to 1 day.
- Preheat grill or grill pan to medium-high heat. Remove chicken and vegetables from marinade; discard marinade.
- Alternately thread chicken and vegetables onto metal or bamboo skewers. Grill kabobs, covered, 5 to 6 minutes per side or until chicken is done and vegetables are tender.
Side Dish Ingredients
- ¾ cup long-grain white rice
- 2 Tbsp butter, softened
- ½ (12-oz) pkg frozen dinner rolls
- ½ head green leaf lettuce, chopped
- 1 cup grape tomatoes, halved
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Preheat oven to 350°F. Cook rice according to package directions; season with salt and pepper to taste.
- Spread butter on frozen rolls; bake according to package directions.
- Toss together lettuce, tomatoes, and vinaigrette just before serving.
